  4. Work quickly with the potatoes still hot – Drain the potatoes, put half a potato in your potato ricer using the disk with smaller wholes, potato skin side up. Press the potato into a pan, release the handles, open, and remove the skin. Continue with the remaining potatoes.
  5. Put the pan over medium heat and stir vigorously for 4 minutes with a wooden spatula, letting any excess water evaporate. Start adding the small pieces of cold butter, little by little, incorporating very well and stirring vigorously (no need to go to the gym tonight!). Again, don’t stress over the amount of butter, it’s still less caloric than French fries.
  6. Bring the milk and the cream to a boil, and add in a stream into the potato mix. U64ntil completely absorbed. Depending on the moisture level of your potatoes, you might need to adjust the quantity of milk.
  7. You don’t want a solid puree nor a runny one. So go slowly at the end to make sure you get the right consistency. If you need to add more milk, make sure you add it hot.
  8. Check the seasoning – salt only. This classic French purée does not have pepper, nutmeg, or any herbs added to it.
  9. Put the purée in a bain-marie to keep warm, adding a little butter over the purée, so it doesn’t form a dry skin.
  10. Serve the purée as a side dish for fish like sole Meniere, chicken, and braised meat or, you can eat it as an entire meal.

2 tablespoons fresh parsley, chopped

1 teaspoon dried oregano

1 medium egg

Instruction:

  1. Delicious recipes: In a skillet over medium heat, add cooking oil or water and eggplant. Cook until eggplant begins to brown, stirring occasionally and adding water or vegetable broth as needed. Transfer to a blender or food processor.
  2. To the same skillet, add more oil or water and the onion and celery. Cook until onions are translucent, stirring occasionally.
  3. Preheat oven to 375°F (190°C).

  5. Pulse the food processor until the eggplant mixture is mostly combined, but still chunky. Transfer to a large bowl.

  7. Use your hands to form 1-inch (2-cm) balls from the eggplant mixture. Place in rows on a parchment paper-lined baking sheet.
  8. Bake for 20 minutes, or until golden, flipping halfway.

Easy homemade carrot cake recipe :

 

Ingredients:

2 cups (260g) chopped pecans (1 cup for cake, 1 cup for garnish. Nuts are optional. )*

1 and 1/2 cups (300g) packed light or dark brown sugar

1/2 cup (100g) granulated sugar

1 cup (240ml) vegetable oil or canola oil (or melted coconut oil)*

4 large eggs

3/4 cup (133g) smooth unsweetened applesauce

1 teaspoon pure vanilla extract

2 and 1/2 cups (312g) all-purpose flour (spoon & leveled)

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 and 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 cups (260g) grated carrots (about 4 large)

 

Cream Cheese Frosting:

16 ounces (450g) full-fat block cream cheese, softened to room temperature

1/2 cup (115g) unsalted butter, softened to room temperature

4 and 1/2 cups (540g) confectioners’ sugar

1 Tablespoon (15ml) heavy cream or milk

1 and 1/2 teaspoons pure vanilla extract

pinch of salt, to taste

 

 

Instructions:

Make the cake:

Preheat oven to 149°C. Line a large baking sheet with parchment paper. Spread the chopped pecans on the sheet and toast for 7-8 minutes. Remove from the oven and allow to cool for 10-15 minutes.

Turn the oven up to 177°C. Grease two or three 9-inch cake pans, line with parchment paper, then grease the parchment paper. Parchment paper helps the cakes easily release from the pans.

Whisk the brown sugar, granulated sugar, oil, eggs, applesauce, and vanilla together in a large bowl until combined and no brown sugar lumps remain. In another large bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves together. Pour the wet ingredients into the dry ingredients and, using a spoon, fold the ingredients together until well combined. Fold in the carrots and 1 cup of the toasted pecans. (The rest of the pecans are for garnish.)

Pour the batter evenly into the cake pans. If using three cake pans, bake for 20-24 minutes. If using two cake pans, bake for 30-35 minutes. Test the center with a toothpick. If it comes out clean, the cakes are done. If not, continue to bake until cooked well. Be careful, Do not over-bake. Allow the cakes to cool completely in

the pans set on a wire rack. The cakes must be completely cool.

 

 

Make the frosting:

In a large bowl using a handheld or stand mixer, beat the cream cheese and butter together on medium-high speed until smooth, about 2 minutes. Add the confectioners’ sugar, cream/milk, vanilla extract, and a pinch of salt. Beat on low speed for 30 seconds, then increase to high speed and beat for 3 minutes until well combined and creamy. Add more confectioners’ sugar if frosting is too thin, more milk if frosting is too thick, or an extra pinch of salt if frosting is too sweet. Frosting should be soft.

Assemble and frost: First, using a large serrated knife or cake leveler, layer off the tops of the cakes to create a flat surface. Place one cake layer on your cake stand or serving plate. Evenly cover the top with frosting. Top with the second layer, more frosting, and then top with the third layer.

Spread remaining frosting all over the top and sides. Decorate the sides and top of the cake with the remaining toasted pecans. Refrigerate the cake for at least something between 15 and 20 minutes before serving. It helps the cake hold its shape when cutting.
